Я очень люблю батат. В салатах, супах, десертах (брауни из батата), основных блюдах (карри из баклажана и батата) и в виде чипсов. Список можно продолжать бесконечно.

Батат называют сладким картофелем, так как его клубни имеют в своём составе много крахмала и сахара. Также богат белком, углеводами, витаминами В, С, РР, А, кальцием, фосфором. Вдобавок, содержит железо, тиамин, рибофлавин. Любой овощной салат батат сделает полноценным сытным основным блюдом.

Ингредиенты на 2 порции:

  • 1 батат около 500 г
  • 1 цуккини
  • 200 г помидорок черри
  • 250 г шампиньонов
  • шпинат или другая листовая зелень 50 г
  • масло 2 ст. л.
  • сок 1 лайма или лимона
  • соль/перец по вкусу
  • пара веточек тимьяна
  • несколько зубчиков чеснока
  • кешью 50 г (можно кедровые орехи)

Приготовление:

Батат почистить, порезать на кубики, добавить 1 ст. ложку оливкового масла и веточку тимьяна, посолить и поставить в духовку на 180 градусов на 30 мин.

Грибы порезать и обжарить с зубчиками чеснока и веточкой тимьяна до готовности.

Кешью обжарить пару минут до золотого цвета.

Кабачок тоненько нарезать кружочками, помидорки черри на четвертинки.

Для заправки смешать 1 ст. л. оливкового масла, сок лайма, тимьян, соль и перец.

На блюдо выложить зелень, батат, грибы, цуккини, помидорки и кешью, залить заправкой и подавать салат.
