A low-acid, high-alkaline recipe for patties made of BEETROOT and quinoa.
- 2 medium size beetroots
- 120ml of uncooked quinoa
- 2 cloves of garlic
- 3 tbsp of spelt flour (or any other flour)
- 1 medium size apple
- Spices (optional, to taste) chaat masala, thyme used in this recipe
The best way to cook beets is simply to roast them, or bake in the oven. Bake beets in their skin until they are about half cooked. Cook the quinoa according to the instructions on the package and allow the beetroots and quinoa to cool … Grate the beetroot, apple and garlic. Thoroughly combine the grated ingredients with quinoa and season with spices. Finally, stir in the flour until the ingredients just hold together.

Cooking veggie patties in the oven not only requires less attention as the patties cook, but it is one of the healthiest methods. You will need very little oil to make this wonderful and healthy dish!
Pre-heat the oven to 180/200C ( fan ventilated oven)
Spray a regular baking sheet with vegetable oil and sprinkle some semolina or any other flour on top to keep the patties from sticking to the slab pan during cooking. Place the patties on the baking tray and put in the oven for 20 minutes. Cook the veggie patties for a few minutes, then turn them with a spatula and continue cooking until they are done. Brush olive oil atop the patties to ensure a golden crust (if you like it).
Serve them with a green salad or your choice of dressing.
